What’s Cooking Wednesday: Chicken Teriyaki Meatballs + Mediterranean Quinoa 🍽️✨

This has become one of our go-to weeknight meals lately, and it checks all the boxes:
✔️ minimal effort
✔️ packed with flavor
✔️ flexible with what you have on hand
✔️ AND kid-approved (which is always the real win)

What We Made

Chicken Teriyaki Meatballs + Mediterranean Quinoa Bowl

It sounds fancy… but I promise it’s so easy.

Ingredients

Here’s exactly what I used:

🥢 Meatballs

🥗 Quinoa Base

How I Make It (So Simple)

1️⃣ Cook the Meatballs

I cook the meatballs on the stovetop and add a little extra teriyaki sauce while they heat up.

👉 This gives them more flavor and keeps them nice and juicy.

2️⃣ Heat the Quinoa

Microwave the quinoa according to the package directions (usually just a couple minutes).

Then add:
👉 a little soy sauce for extra flavor

3️⃣ Build Your Bowl

That’s it!

Add your quinoa to a bowl, top with meatballs, and you’re done.
